Bits & Bobs on Toast

Bits & Bobs on Toast is a recipe that dates back to friends of Chrissie’s – when she was 16! So we’ve been enjoying this snack for 60 years or more, here at Rabbit Towers. It’s another of our quick and easy recipes for cheap food from the Visit Fylde Coast cookbook. You can make it with all kinds of leftovers – give it a go!

Bits & Bobs on Toast

It’s just what the name suggests – anything that you’ve got going spare – prepared and cooked and grilled on toast. Another good recipe to use up odds and ends that are past their best – and it’s tasty too!

Our recipe makes 8 slices. You can adjust the quantities to suit.

Cost: This is a cheap and easy tea-time snack that’s really cheap to make. Throw in any tomatoes, mushrooms, onions, cheese etc that you’ve got – it’s a perfect way to use up anything that’s looking past it’s best!

Tip: Prepare everything in advance and it’s even quicker to make when tea-time comes around.

Ingredients

  • drop of oil or blob of butter
  • 1 large white onion, finely chopped
  • 4 large tomatoes, chopped into smallish pieces
  • about 4 heaped tablespoons of cheese. Grated or chopped up into smallish chunks (it will melt, no need to be precise).
  • a few chopped mushrooms – if you like them
  • 1 egg
  • 8 slices of bread
  • pepper to taste

How to make Bits & Bobs on Toast

If you’re having this quick and easy recipe as a light snack, you can prepare the chopped ingredients beforehand.

Soften the onions in a pan with a drop of cooking oil or a blob of butter. Add the mushrooms if you’re using them.

Then add the tomatoes and cook until it’s all going soft. If it’s made a lot of water at this stage you might want to drain a little bit off with a big spoon.

Now add the cheese, stir and give it chance to melt. Season with black pepper.

Lightly beat the egg in a cup and add to the mixture, stir so that it all mixes in and the egg starts to cook.

Meanwhile, toast one side of your bread under the grill. When it’s browned, turn it over and share the mixture between the slices.

Spread the mixture out to the edges of the bread, put back under the grill and cook. Personally I like it quite well done – and the crunchy burnt bits at the edge!

Enjoy while it’s hot.

Other variations on Bits & Bobs on Toast

This is a similar-ish kind of thing to Welsh Rarebit. So you could add anything that you like to the mixture. Try a splash of Worcestershire sauce, or some chilli. You could put peppers in the mixture, sweetcorn, tuna and chicken. Whatever takes your fancy.
