It’s a sad fact that everything that tastes nice is bad for you. But all things in moderation – and enjoy this best bacon sandwich!

There’s nothing nicer than a bacon sandwich. Unless of course you’re a vegetarian. But you do hear vegetarians say that it’s the one thing they miss – and you can understand why.

Have you noticed that the bacon sandwiches you buy taste totally different to the ones that you make at home? I think it’s because they cook theirs on one of those flat-top, griddle things. We always grill ours which drains the fat off, and I suppose some of the taste.

Our best bacon sandwich has a magic ingredient: cooked tomatoes. Why don’t you try it?

The trick is to cook the living daylights out of the tomatoes so that they are just hovering on the edge of burnt. It caramelises the sugar (you can add half a teaspoon of sugar to enhance the taste) and makes a yummy, strong relish taste. You’re aiming for a paste consistency that you can spread on your bread.

Cut your tomatoes up into smallish slices/pieces, and put in a wide pan so that the water can boil off easily. A small frying pan is ideal. Add a small dash of olive oil or similar and plenty of black pepper.

Put the pan on the ring and crank up the heat to full, and then cook them! Meanwhile, start to grill your bacon.

Depending on how many tomatoes you make it might take a while to boil the water off. See how the pan full above reduces to a small quantity once the water evaporates. You’re aiming for something that’s very well done, bordering on burnt!

It’s also a great way to use up old, squashy tomatoes that are a bit fed up. Vine ones are especially nice cooked this way.

Cooking tomatoes also releases the lycopene in them which is really good for you. I think it’s an anti-oxidant but I wouldn’t swear to it! Grilled bacon has little fat content, so it’s not that naughty a meal…

It has to be white sliced bread for me, but you might prefer barms or rolls. And the question of what you call a bread roll is another matter altogether!

I like my tomatoes spread on one side of the bread and piccalilli on the other. With the bacon sandwiched between, it’s heaven on a plate!
