It’s probably fair to say that we all know we should be eating more fruit and vegetables… unfortunately everything that’s bad for you tastes much nicer! But it doesn’t have to be all lettuce and tomato! Here are some ways with salad to brighten up the green stuff and help you to eat more if it!

Ways with Salad

Here at Visit Fylde Coast we try really hard to eat a proper, balanced diet. Food advice comes and goes but the one thing we try to do is eat as much scratch-cooked food as we can. It cuts out the processing and additives and it’s also cheaper too.

Tip: Bagged salad is dead easy – just open the packet and eat it. But it’s also expensive (weight for weight it’s very expensive) and it creates a lot of waste with all that plastic packaging. Why don’t you try saving it for times when you need it – picnics and a healthier alternative when you’re out and about. For meals at home it works out a lot cheaper to buy the basics and get creative!

Money saving tip: Prefer to take something healthy to work? Buy a range of different sized plastic boxes and make your own food to take with you rather than buying it every day. It also cuts out a lot of plastic waste too.

Salad with everything: If you were so inclined you could serve a side salad with most meals.

Chopped-Up Salad

We call it chopped-up salad because it’s all chopped up! Dead easy to make, best prepared in advance and you can put literally anything in it. It’s a great way to use all kinds of fridge gravel up!

If you buy an iceberg lettuce, cucumber and tomatoes (or any of your favourite salad type vegetables) you can make this plus several more meals throughout the week. It goes a surprisingly long way, as side salad, sandwich toppings and more.

Ways with salad: Chopped Up Salad

Ingredients for Chopped Up Salad

  • A slice of iceberg lettuce per person, chopped into mouth-size bits (just take full width slices off the whole thing, leaving the rest whole – it keeps fresher like that)
  • Finely chopped hard-boiled eggs – we use one each but you could add more or less
  • Fresh tomatoes, chopped into small bits
  • Piece of cucumber, chopped into small bits

These are the basic ingredients that we use to create the bulk of the meal. You can use anything you want to. For example, you could add hard cabbage instead of (or as well as) lettuce.

Then add whatever you want to, or whatever you’ve got! I usually add something different to make it tasty:

  • Fruit: halved grapes, tinned pineapple, peach, plum – whatever is lurking in the fridge or in season
  • Some finely chopped carrot, radish, courgette
  • Spring onion
  • Tinned sweetcorn, tuna, or that tin of salmon from the back of the cupboard!
  • Sugar snaps or mange tout
  • Chopped dried apricots, sultanas etc and nuts
  • You could also add cooked and cooled pasta.

How to Make Chopped-Up Salad

Chop everything and put it all in a mixing bowl. Include the juice that comes out of the tomatoes and fruit. Chuck the whole lot in. The egg yolk will make a sort of a sauce with all this juice. If you’ve got an egg slicer you can use it multiple times to quickly dice the egg!

Make it in advance, put a plate over the top and pop it in the fridge until you’re ready.

It’s really tasty! Try topping it with a little grated cheese and mayonnaise. Salad sprinkles are really nice on top too – they add some crunch.

I usually make it in a morning for tea – then all I have to do is serve it at tea time – when I can’t be bothered to get food ready 🙂 Try serving it with home-made soda bread.
