No-Cream Ice Cream

No-Cream Ice Cream

I don’t get 10/10 for presentation on this one – excuse the hasty photo but I was in a rush to have my tea! This is a favourite in our house and really quick to make.

To Make No-Cream Ice Cream

This is another one of those ‘by eye’ concoctions that doesn’t really have a recipe – which makes it all the more easy to do.

What you need:

  • Frozen bananas
  • Your choice of frozen fruit
  • A stick blender or food processor

A bit of advance preparation:

This is really easy to make but you do need to be a little bit organised in advance. It’s a great way to preserve and use up old fruit too.

  • Peel and roughly chop your fresh bananas. I just split them down the middle and chop into big chunks. Lay them on a piece of baking paper or a plate and pop them in the freezer. Once they’ve frozen individually pop them in a bag or box to store – it just makes them easier to get out when you come to use them.
  • Bags of frozen fruit go a long way, making a portion size relatively cheap. Use your favourite flavours – I particularly like raspberry and a bit of mango thrown in. That’s all you need!
  • Pop it in the blender/food processor or use a stick blender to mix it all to a creamy consistency. Serve and eat straight away.

Top Tips

  • It’s a great way to use up those last couple of bananas that are starting to look a bit too ripe.
  • You’re going to blend the frozen fruit when you’re ready to serve and eat it. The frozen-ness of the fruit makes the creamy ice cream consistency. But, by trial and error, I’ve found that food straight-from-the-freezer is too solid for my food processor. So a couple of hours beforehand I put all the frozen fruit I’m going to use in a bowl and pop it in the fridge. This just softens it enough to blend without breaking the machine.
  • Measure out your solid fruit in a dessert bowl to get a better idea of portion size. The first time I made it I made enough to feed the street!
  • Been strawberry picking? Got plants in your own garden? Freeze the fruits individually and use them at a later date.
